Baptiste Fournier, who was entrusted with the restaurant by his parents twenty years ago, hasn't forgotten that he was Grand de Demain in 2011. His cuisine remains alert, incisive and personal, always respectful of the product and attentive to valorizing the terroir: donkey's neck eggs, foie gras with spices and beet with salt, beef chuck confit, squash and Roscoff onion velouté, fig confit tart with faisselle basil sorbet, in a menu that's always well composed. Five-course menu, including cheese, for €74, with a fine cellar of Sancerre wines and suggested pairings.
