Gourmet Restaurant On the Spanish border, just a few minutes from Espelette, this charming inn captures all the authenticity of the Basque country: a house with typical architecture, welcoming rooms and a verdant garden at the foot of the mountains. To sum up this picture-postcard setting, Chef Benjamin offers seasonal regional cuisine, well stocked with local produce, including Banka trout gravelax, a plate of kintoa ham, scallops, old-fashioned potato mousseline, fried pork and coral emulsion, low-temperature ibaïama pork loin, seasonal vegetables and hearty jus, iced nougat and red fruit coulis.
