Remarkable Restaurant There's a spirit of Vieille France about this house that can be divisive, between those who emphasize its charm and nobility, and those who resent a nostalgia too far removed from modern times. But we can only underline Jean Coussau's true and sincere work, his mastery and experience, the strength of his noble product and the excellence of his service. The meticulous organization of this gastronomic ballet is worth at least for what it testifies to a unique and typically national art, the practice of which has been pushed to the summit. So, we applaud without restraint this anthology of cuisine, in a luxurious setting, with parquet flooring, silverware and staff in full regalia. You'll find lobster salad and coral, blue apples and samphire, scallop stew, fresh black truffles and truffled celery mousseline, roast suckling lamb with pink garlic, candied apples and amber beer ice cream, barley in three textures. The cellar is exceptional, with several hundred references and numerous verticals of grands crus, Pétrus, Haut-Brion, Yquem, DRC, La Tâche, Corton...
