Chef's Restaurant A modern-day restaurant, well managed by chef Charles Guillou, who is committed to fresh seafood products, and masters all preparations, whether raw, smoked, marinated or cooked using sustainable and preferably local ingredients. We were delighted with the starter mezzes (lean sushi oxalis with seaweed chutney, spring roll of horse mackerel with Caesar sauce, mussels marinière deglazed with sake...), as we were with the sequel, with crispy bonito, Asian spinach, zucchini cream, oyster leaf or eggplant lacquered with honey and soy. Desserts in the same spirit, a little less convincing, but pleasant raspberry compote, Breton cake, fresh raspberries, verbena ice cream and meringue. Well-coordinated service, eclectic cellar.
