Chef's Restaurant Brice Goeuriot and Margaux Le Baillif met at Ferrandi, and quickly formed the idea of their own restaurant. Their most recent experience at Choko Ona in Espelette gave them the opportunity to take flight after two years at the service of this fine establishment. Now they're back in the big time, in a warm, zen setting that allows them to express themselves in a highly effective 49 € formula: the gourmet simplicity of a well-customized leek-vinaigrette (grilled on the BBQ, vinegared vegetable juice, leek oil sabayon, buckwheat praline and gavotte), beautiful scallops, tartlet and roasted, amaranth risotto and fried, lemon gel, scallop and chorizo emulsion, before the superb pithiviers with foie gras and pigeon, mustard cabbage, arugula juice, a brilliant exercise in style. A simpler dessert, pear tart with baked apple and cinnamon sorbet, very good service orchestrated by Margaux and extended by the good work of Alexis Marcoux, the sommelier, who looks after an already built cellar, loving clean wines and fair prices.
