Sébastien Gravé's restaurant remains a Bayonne landmark, having been one of the best ambassadors of Basque cuisine in Paris in the days of his Pottoka restaurant. Here you'll find the same conviviality and sense of welcome, the effervescence of Bayonne on this corner of the quays, the pleasure of a Basque terroir revisited, with a sense of presentation. Rediscover the region with the egg roll of Pyrenean trout and smoked eel on nori leaf, cauliflower cream with hazelnut butter and mustard ice cream, marinated kohlrabi and homemade seaweed brioche, the laquered pork belly and octopus from Galicia, parsley mousse, squid ink and chorizo arancini, fennel and parmesan aioli, or the ganache M. Txokola ganache, crumble, light mousse, salted butter caramel, peanut ice cream, smoked salt and Espelette pepper. Well-stocked cellar.
