"My parents had convinced me that I'd better have my back if my plans in the kitchen didn't come to fruition. "
A partner in the city and in the kitchen
Once she had passedher baccalaureate, the young woman joined the prestigious Ferrandi school and obtained a bachelor's degree in culinary arts and entrepreneurship.I already had a career plan in mind," she says, "and a clear desire to open my own restaurant one day. This degree matched my expectations perfectly. "
At the same time, the novice chef was working at Hubert Duchenne - Restaurant H in Paris, one of the first beneficiaries of theof the Dotation Jeunes Talents Gault&Millau -, then at Thoumieux, under Sylvestre Wahid, and at the Auberge Basque, in Saint-Pée sur Nivelle. These were experiences she shared with Brice Goeuriot, her future husband, whom she met at Ferrandi and really got to know at Hubert Duchenne. "We left together to work at La Chèvre d'Or, then at Château de Candie with David Loisel. It was a wonderful experience with a chef who taught us a lot. "
The big leap at 25
The two young men then moved to the Basque country to work alongside Clément Guillemot and Flora Le Pape - two other recipients of the Gault&Millau Endowment, at the helm of Choko Ona in Espelette. "They became our friends. It was a great experience, which of course came in handy before we opened our own restaurant in Bayonne. "
L'Inattendu was up for sale and matched the wishes of the two young restaurateurs. The opening is scheduled for November 2023. "There are three of us in the kitchen and two in the dining room, for around twenty covers," explains Margaux.
