Cooking after a general baccalaureate

Once he'd passed his baccalauréat, the young man joined the prestigious school to study for a bachelor's degree in culinary arts and entrepreneurship. "I already had a career plan in mind and a clear desire to open my own restaurant one day. This bachelor's degree matched my expectations perfectly. "

At the same time, the novice chef worked at Hubert Duchenne - Restaurant H, Paris, one of the first recipients of the Gault&Millau Jeunes Talents Endowment - "with Margaux Le Baillif, my future wife, whom I met at Ferrandi. But before our respective stints with Hubert Duchenne, we didn't know each other. We went to work together at La Chèvre d'Or, then at Château de Candie with David Loisel. Arrival in the Basque Country in 2021

The two young men then joined the Basque country and the brigade of Clément Guillemot and Flora Le Pape - two other recipients of the Gault&Millau Endowment, at the helm of Choko Ona in Espelette. "They have become our friends. It was a great experience, which of course came in handy before we opened our own restaurant in Bayonne. "

L'Inattendu was for sale and matched the wishes of the two young restaurateurs. The restaurant opened in November 2023, and their hard work was quickly rewarded with a 14/20 rating.
