A new address led by chef Chloé Clamens, who worked at Nina Métayer's, and a caring team, Nouche offers clear, meticulous cuisine marked by generosity. The short, well-balanced menu combines seasonal produce, light Asian influences and indulgent desserts. Tuna tataki, crying tiger-style beef, asparagus risotto or chocolate sabayon: the titles are clear, the plates precise, carried by a real intention. The service, carried out by a pair of accomplices, ensures a fluid and attentive rhythm. The decor is thought through to the smallest detail, right down to the crockery and the most discreet spaces. The wine list remains coherent, while craft beers, cognac from the Ile de Ré and in-house infusions continue the house identity.
