Remarkable Restaurant The house that Firmin Arrambide made us love forty years ago is as solid as ever. The family is still here, and Philippe, at the helm, has managed to bring it into the century and keep it going. The history of the Pyrenees mingles with that of Saint-Jean and the wider Basque country. The pleasure is constant with both classic and more recently inspired dishes. There's a lot of finesse in the poached duck foie gras, artichokes, fried bread, sweet onion emulsion, pan-fried langoustines, carrot cream, lemon soy juice, crispy Pyrenean milk-fed lamb sweetbreads, porcini mushrooms, piquillo mushrooms, garlic confit, broad beans, milk chocolate pannacotta and dark chocolate cookie. The cellar is full of irouléguys, including Brana of course, in a wide classic selection, and a reduced choice by the glass.
