Chef's Restaurant It's a moment suspended in time, a Basque house nestled in the depths of the mountains, set on the banks of the Nive des Aldudes since 1864. The 4**** hotel is the result of a family adventure that has been carefully handed down for five generations, preserving and promoting a typical art of living, wise luxury and remarkable regional spirit. In addition to the charm and pleasure of the house, we also come for Pascal Arcé's beautiful plates, a sensitive balance between local heritage and great gastronomy, knowing how to highlight the terroir in calibrated and aesthetic compositions. Of course, there's the Banka trout, carpaccio and gravelax, pink berries and tangy cream; cocotte of egg with mountain boletus, yellow wine sauce and butter mouillettes; trout du vivier, gingham carrots and mustard beurre blanc; boneless pigeon flambéed in cognac, chestnut flan and abattis toast, a true Basque cake from an 1864 recipe. The cellar follows without fail, with a good selection from the region.
