Gourmet Restaurant Charles Bernabé in the kitchen, Tristan Bernabé in the dining room, a wonderful adventure begins for the two brothers in this gourmet rue des Hauts-Pavés, just above Talensac. Charles worked for several years alongside Christophe Hay at La Maison d'à Côté, and Tristan, who worked for Greg Marchand at Frenchie, is no stranger to the world of wine. Here they are, their heads well made and full of reasoned ambition, at home in Nantes, established in part thanks to the Gault&Millau Endowment. The fundamentals are there: simple, precise cooking, one product, one sauce, one accompaniment, the right gesture, sobriety on the plate and rigor in terms of cooking and textures, giving first positive sensations to the red mullet with crunchy kohlrabi and mayo with head jus, the pollack fumet with muscadet, grilled asparagus, Vendée ham and Kalamata olives, or the short rib with jus court and vegetables of the moment. Taste and finesse through to dessert, a beautifully updated childhood baba with rhubarb, a restaurant of today, like a beautiful plant that just needs watering to grow. The cellar is already well stocked, with a choice of wines by the glass, divided between regional vineyards and other terroirs.
