Gourmet Restaurant A new and interesting table led by two complementary buddies, Nicolas Trinquet (savoury), ex-Têtedoie in Lyon and Pickles in Nantes, and his partner Tristan Hausser (sweet). The result can be savored in this charming room in an unassuming corner of the town, which was once the good Bistrot à Gilles. The bon franquette tradition lives on, with simple, contemporary dishes for lunch: curé nantais beet and egg, filet de julienne, spider pork, nantais apple cake... In the evening, the duo spread their wings for a much more elaborate and refined score: smoked scallops with squash and ponzu, veal quasi parsnip beet and fig, apple with lime and ginger for dessert.
