Chef's Restaurant We're delighted with this new dynamic and the island's return to the forefront of gastronomy. The hotel is obviously a must, facing the ocean on one of the most beautiful beaches in oléron, and the panoramic room lends itself to fine, racy, natural marine cuisine. Under the guidance of new Limousin MOF David Boyer, chef Marc Lereun creates technical and tasteful dishes: black mullet marinated in timut and green asparagus, crab with lovage ice cream condiment, pearly beurre blanc hake with Baume de Boutteville and shellfish, adapting classic ideas such as sweetbreads and lobster with artichokes in amaretto. We'll let the setting sun intoxicate us, followed by desserts from pastry chef Paul Tranquard, who has worked at the Palais Gallien, featuring strawberries and chocolate with XO cognac. Good "Écume" menu at €70, well-stocked cellar of classics, excellent service, worthy of the occasion.
