Gault&Millau's review 2026

Pierre Gagnaire's coastal residence is a Charentais must-see, located just below La Rochelle, overlooking the Pertuis d'Antioche. It's a bright, contemporary house, with an impressive stone ceiling and an intelligent choice of noble materials, responding to a fresh, wild cuisine. On the Gaya menu, tomato soup, eggplant cannelloni, red tuna tartare, lemon and green shiso sorbet, burst cherry tomatoes, then shellfish marinière with cider and pointed cabbage, red mullet wrapped in Bigorre bacon, sweet onion fondue with carrot juice, a slice of veal fillet, a chop of chard with capers, crispy sweetbreads with angelica from the Marais Poitevin, Paimpol cocos and wild mushrooms. We finish, of course, with Pierre Gagnaire's grand dessert. A fine cellar of over seven hundred references, designed by Paul Fauvel.
