Chef's Restaurant It's an extension to the ocean, offering Pierre Gagnaire a new window of expression, between land and sea. The sumptuous room evokes natural elements, stone and the horizon, as if to reflect on the frontier of terroirs. Here, Loris Cornacchia executes the chef's ideas with undeniable savoir-faire, in a series of gourmet menus starting at €110. You can visit the coast and the islands: a carpaccio of sea bream with fleur de sel, cauliflower mousseline with black garlic and turmeric, a velouté of white asparagus, tarragon tips, pink radishes, clarified consommé, egg yolk confit with Pineau des Charentes and tagliatelle tails with pine nuts, roasted fresh goat's cheese, a royale and rosette of langoustines with Sarawak pepper, artichokes peppered with mint, or slices of almost veal coated in a bitter jus, green cabbage and fresh morels in yellow wine with a hint of coffee, sweet onion ravioli, wilted carrots and sweetbreads with angelica from the Marais Poitevin, not forgetting the grand Pierre Gagnaire dessert. As for the cellar, Paul Fauvel comments and advises on a fine selection of over seven hundred wines.
