Gourmet Restaurant Winner of the Gault&Millau award, Gabriele Ferri has quickly established himself on the island as one of the figures to watch. Having worked with Gagnaire and La Tour d'Argent, the young Piedmontese chef has everything it takes to succeed, already offering a high level of cuisine d'auteur here. His €62 menu offers excellent value for money, with mullet tartare, peas and cucumber, ricotta and Melifera gin granita, infusion of pods with green cardamom, flame-cooked sardines in tarama, green beans with verbena, zucchini, bagna cauda sauce, poached hake in oil, gros gris charentais de Mons, chickpea ragout from the Josière garden and miso chard, wasabi jus, skin-roasted lean, asparagus and fennel, burnt lemon paste, beurre blanc with Île & Elle beer, and finally a ganache dulcey with Lumi seaweed, raspberry heart, Sicilian almond crumble and piquillo sorbet. Good choice of wines from the region, and good advice from Marie.
