Chef's Restaurant Self-proclaimed self-taught, passionate and exciting on the restaurant's website, chef Jérôme Paquin doesn't lie! His smile may not be visible in the dining room, but it's evident in his creative and engaging cuisine, centered around a dozen signature dishes in all, each one following the seasons, his mood and his innovations of the moment, with a few exceptions on the menu all year round because they're so much in demand! As soon as you arrive, a mini kugelhof with munster and horseradish, to be savored with a caraway tuile, takes you back to a modern, dynamic Alsace that will be found throughout the meal, often in the background. As he also loves the sea and complicating his life for our enjoyment, the chef will then take the time to sprinkle his leek vinaigrette in different textures with a daring citrus cream cheese and shavings of bottarga, for those who haven't succumbed to his "Souvenir d'enfance", i.e. his coquillettes jambon like a risotto, sublimated by a free-range egg cooked at 65°C, onion emulsion - a dish that the faithful always ask for. Another trademark is his "Terre et mer", which combines wagyu beef, confit tongue and raw marinated langoustine, accompanied by a seaweed potato compression and a caramelized onion tartlet: almost too many flavors combined, but who's going to complain? And since his skilled hands know how to do it all, it would of course be unseemly not to finish with a refreshing "verger-potager", which skilfully marries different textures of lemon and petit-pois, or the impressive "Champignon", a unique dessert in which real mushrooms, accompanied by hazelnuts and blueberry ice cream, will amaze even the most jaded... A fine French cellar, an excellent selection by the glass and smiling, natural faces in the dining room who take as much pleasure in looking after their guests as they do in spending an excellent time in this fine establishment.
