Here's a chef's bistro that really appeals, so much so that we suspect a few gastro customers will hesitate before making the switch. It has to be said that Laurent Arbeit, as gifted as he is well-trained, can weave high-flying plates, but he also knows his region and Alsatian family cuisine very well: good terrines, tarts flambées, smoked trout, pike-perch on sauerkraut, a tribute to "chef Marco", and of course the chestnut torch to finish...
