Remarkable Restaurant It's a done deal: the Tourbiers' Caudalie group has installed a top chef at Cheverny, worthy of the place and the ambitions of this vast complex, which doesn't skimp on protocol to make it look good. As at Grand'Vigne, the excellent work on the plates is sometimes a little obscured by this pompous demonstration, which in no way detracts from the quality of the service. From the high-quality appetizers to the dessert, the focus is on the excellence of the ingredients, products, butter and bread, heralding well-structured dishes with clean, harmonious flavors: wood-grilled leek with parsley coulis vinaigrette, monkfish fillet rubbed with wild nettle, white radish, rapeseed oil emulsion and tangy condiments, a dish of remarkable balance, roast venison back with juniper and pear glazed in red wine syrup, followed by a classic Canadian apple dessert. On the honor roll, sommelier Thibault Delpont deserves a first prize for his erudition and ease in taking you on a tour of vineyards near and far, the vast cellar allowing for multiple audacities. Prices are logical, except perhaps for the food and wine pairing offered at €90 for four 8cl glasses.
