Chef's Restaurant The name of this Blésoise restaurant, the "little sister" of Christophe Hay's four-toque Fleur de Loire, gives us a few clues. Indeed, L'Amour Blanc is a variety of carp reminiscent of one of the chef's signature dishes, which he prepares "à la Chambord". The white color perfectly reflects the refined, luminous style, both in the dining room and on the plate, as with "Adèle's poultry" and its deliciously moist roast supreme, confit leg, chard gratin and black garlic. Last but not least, the love of good produce, like these hazelnuts from the Grande Vove farm, some thirty kilometers away, sublimated for dessert by young pastry chef Diane Billiet in a combination with mandarin orange. As for the cellar, there's something for everyone, including a number of discoveries from confidential estates.
