Away from the city center, in the quiet Saint-Nicolas district, insiders don't hesitate to leave the main roads to find the tranquility and benevolence of this almost thirty-year-old house. Chef Christophe Cosme is an experienced chef with a sure sense of taste, always eager to renew his menus and imagine, season after season, a Loire cuisine in his own image. The plates showcase a very fine bourgeois cuisine, reassuring and precise, delivered without a hitch in a fair €69 menu. There's duck foie gras with côteau du Layon and artichokes, chestnut and gingerbread, low-temperature pan-seared pike-perch back, caramelized zucchini flan with bouchot mussels, shortbread tart with bourdaloue candied pear and vanilla chiboust, ribot milk ice cream and pear. Classic cellar.
