Chef's Restaurant Vitré was waiting! Vitré was impatient! Now it's here! Léonie and Romain Vettier, a very young couple, have finally opened a lovely restaurant in the heart of the old town, in a 16th-century house. Complementing each other in the kitchen and in service, they spent a long time fine-tuning their set-up, not to procrastinate, but to shape their working environment in their own image, getting to know the region's best producers and finding good craftsmen (cabinet-makers, ceramists...). In their small, characterful dining room, modernized without altering the weight of history, people now flock to enjoy light, unpretentious market cuisine. The crumbled crabmeat rests on an unctuous broccoli bavaroise which, however, dominates the duo a little too much. The candied lemon adds an interesting sparkle, as do the crisp angel hairs that crown the whole. To follow, the beautiful cod steak is finely combined with parsnips (in different textures) and peanuts. Very lightly sweetened, the technically successful orange-glazed soufflé has all the liveliness befitting a successful finale. While the wine list is mostly up-and-coming, it nonetheless boasts a number of fine wines, including a Haut-Côtes-de-Beaune from JP Fichet, a Br saumur-Champigny from Domaine des Closiers, a Muscadet from Domaine de la Pépière... and a Loire wine from Domaine de la Grange Tiphaine.
