Chef's Restaurant In the heart of a Touraine village on the banks of the Loire, a chic guinguette opened in 2014, where two accomplices, one a fisherman, the other a chef, introduce us to river fish that are all too often neglected. Chef Ambroise Voreux, who appeared on Top Chef, has mastered the art of dissolving chub bones by marinating it in the local winegrower's white wine, then accompanying it with a black garlic and honey mayonnaise; the catfish, served poached, is revealed with the juice of its blood and red wine on a cream of shiitake, the nori seaweed that forms the link between the sea and the river; the vegetables all come from producers in the four corners of Touraine, and you can leave this Mecca of Loire gastronomy with a pot of barbel rillettes or a soup of wild Loire fish. Beforehand, you'll have finished your dinner with a madeleine with raspberry, elderberry gel and herb ice cream sprinkled with roasted millet seeds; the wine list gives pride of place to the Loire, with the particularity of showing us flasks that respect the living world, from its source to its mouth; the team in charge of service is attentive to their guests, smiling and proud to accompany us during an evening that continues with a sunset on the river. It's a rare moment of pleasure, with a cuisine focused entirely on the Loire and its fish.
