Chef's Restaurant Frédéric Arnault, who won an award at last year's Gault&Millau Tours, runs his restaurant like he runs his region, promoting local produce. And it's only logical that he should reap the rewards with a loyal clientele, who don't just come on fine Sundays, but treat themselves to a made-to-measure menu offering as much audacity as tradition: grilled octopus tartlet with cocos michelet chorizo and creamy harissa, hake pot-au-feu with autumn vegetables and shellfish jus, veal medallions with salsify and chanterelle mushrooms and veal jus with parmesan foam. Good chocolate dessert, impeccable €44 menu and rich Loire wine list.
