Laurent Jury's astonishing house near Clermont-Ferrand is as engaging as ever, with its magnificent Belle Époque and Second Empire architecture, red glass roof, herringbone parquet flooring, moldings and beautiful chandeliers, fantastic stained-glass windows, mirrors and areca palms. The chef, who has nothing left to prove, works the finest products into elaborate menus, starting at €49: Neuvic caviar, fir-tree autumn morels and cauliflower, roasted scallops with porcini mushrooms, Clovis Pacaut wagyu beef, truffle jus and Levant sake, a dessert of pear, morel and vanilla. Well-stocked cellar with over three hundred references.
