Gourmet Restaurant Quentin Choiseau has no shortage of ideas, which he applies to two experiences: bistro-style at lunchtime and gastronomic in the evening. The first is a competitive menu at €24, while the second is a €40 version, featuring a cuttlefish ballotine snacked with soy sauce, stuffed with Chinese cabbage and carrots, in a ginger-coconut broth, white mullet in puffed scales, black cardamom and saffron hollandaise sauce, Iranian-style risotto, rosemary fennel confit and crispy puffed rice, and guinea fowl supreme, citrus poultry jus, roasted quince, roasted chestnut, roasted butternut purée and clementine peel gel. Good desserts too.
