Chef's Restaurant Nobuki is now a staple of Japanese cuisine in Touraine, where chef Jean-Nobuki Remon has been officiating since 2013. We're in the mood, with a view of the open kitchen where the whole team converses in Japanese; the setting respects a refined Zen style with obvious Asian inspirations. The cuisine is strongly inspired by the land of the Rising Sun, where the chef worked for ten years, but some ingredients are French or even local, like the delicious duck breast tataki with ponzu sauce. Two formulas are available: the bento and chirashi menus for lunch, or the seasonal menu every Friday evening, for which reservations and patience are essential. Surprising wine list with references from the region, and a fine selection of sakes.
