Chef's Restaurant Pagnol in Touraine? And why not? The sign lends itself to this, evoking the famous partridges that inspired the child in "La gloire de mon père" ("My Father's Glory"). At Ghislain Damaye and his sister Véronique's place, there's the tender, generous truculence of the Provencal storyteller. On the plate, the chef's mastery of cooking and seasoning shows a sincere attachment to a tradition that he knows how to make evolve, even if it sometimes seems to us that the whole lacks a little audacity. The black pudding from Bigorre with mushrooms and chestnuts is a fine piece of work, melting just as you'd expect, the veal is cooked just right, salsify, cabbage and black Kalamata olives, roast juice with capers, and the butternut vanilla rum dessert rounds things off with a touch of originality. A correctly varied cellar, a little thin and lacking in commentary, accessible food and wine pairing.
