Chef's Restaurant It's a wonderful family adventure, with brother and sister Ghislain and Véronique Damaye, both equally dedicated. Ghislain Damaye, the chef, Jeune Talent Gault&Millau 2019, has worked at La Roche Leroy and Ducasse, while Véronique, in the dining room, worked for Christophe Cosme in Blois. Their wealth of experience has given them a happy flexibility of mind, enabling them to serve large-scale dinners as well as lunches with friends, with a keen eye for the product and an intuitive grasp of the seasons. On the menu: smoked trout, celery remoulade, beet crisp with salt and camelina; a retour de criée, petit épeautre, mushrooms, cabbage, blackcurrant juice and red wine; a noir de Bigorre, sweet potatoes, fig and chestnut; a cheesecake with pumpkin, pear, vanilla ice cream and pumpkin seeds.
