Sponsored "History buffs be warned: this Ariège nugget is a must-see! Château de Sibra dates back to the 16th century. It houses three apartments, a fully-equipped vacation home and five spacious bedrooms, in a simply magical setting. Set in 15 hectares of parkland, it is an ideal venue for weddings, seminars, parties, artists' residencies and various cultural events. What's less well known is that on the first floor of the château, there's a table d'hôtes open to all, not just residents, on Monday, Tuesday, Thursday, Friday and Saturday evenings. Owner Sibylle Thomke has given Chef Rachid Benchadi carte blanche to express his talents using quality produce, some from the château's own kitchen garden. He cooks vegetables to perfection, like his cherry tomato tarte tatin. Guests are welcomed in complete privacy (19 people maximum) in the dining room, library, small lounge or, in fine weather, on the terrace. "
