Gourmet Restaurant Located in the legendary Grand Hôtel Moderne, Stéphane Castaing perpetuates the great traditions of this classic bourgeois institution. It's the perfect place for special occasions, with its refined setting, moldings and silverware, and its impeccably executed cuisine. The à la carte menu features elegant constructions such as semi-cooked trout with smoked salt, avocado, lemon yoghurt, egg powder and parsley, fresh calamari roasted with Espelette chili, crispy rice and mustard, poached and roasted poultry with mild garlic, polenta, lemon confit, tomatoes and sherry.
