Gault&Millau's review 2026

Following the departure of Julien Poisot, Château de Mercuès recruited a new young director (Gaëlle Sabatier) to manage the entire establishment, and hired Clément Costes, 34, who has worked with Joël Robuchon, Jean Coussau and Stéphane Carrade (3 toques in Gironde). He took up his post in this splendid "Relais & Châteaux"-stamped stately home in January 2025. His dishes are ambitious, sometimes too much so (too convoluted, too many ingredients, pompous titles) for the few dishes repeated each day on set menus, with the terroir taking a back seat to prestige products that are a little too present. Nevertheless, the two toques are there (lobster and seaweed, pigeon with salmis sauce, chocolate dessert), and the attentions are numerous and of high quality (appetizers, pre-dessert, post-dessert, bread and butter). Service a little below expectations for the château's standing, but the Cahors cellar is obviously very strong.
