Remarkable Restaurant The Maybourne Riviera restaurant (formerly Vistaero), now run by Mauro Colagreco, is moving with the wind, offering luxury, panoramic views and the modern, natural spirit of the great Italian-Argentinian-Mentonese chef. The seasonal menu-card is wide-ranging and prolix, loving caviar and prestige, but dosing it with subtlety: on a carpaccio of smoked plum fish with almond milk, perfumed with verbena and osciètre, on lobster with binchotan, yellow peach, Xipister sauce, or on matured Galician beef, beans and cherry tomatoes with old-fashioned mustard condiment, full-bodied gravy... We end on a light note with millefeuille marin with nori seaweed, Bourbon vanilla, toffee sauce, and we never tire of looking at the Mediterranean in the blue of our eyes.
