Remarkable Restaurant With his name on the pediment, Christophe Cussac is in total control of the Hôtel Métropole's gastro, and is reaping the dividends of his many years of loyalty to this establishment, where he blossomed under the banner of Joël Robuchon. So it's only logical that, in this luxurious bourgeois setting, you'll find a farandole of refined technique at the service of gourmet delights on prestigious products: gambero rosso and burrata with rosemary, lobster tarragon spinach lasagne, sole and lemon de menton beurre battu, pigeon and lettuce creamy with parmesan, entrecôte with marrow toast melba sauce vigneronne. People come here less to discover than to pamper themselves, but the effect is immediate, the service perfect and the cellar rich. And for regulars, there are always the fifteen or so "fines bouchées" luxury tapas for epicureans with a taste for everything.
