Remarkable Restaurant This isn't the Hôtel de Paris's second restaurant, it's just one of the Principality's finest tables. A contest of excellence (just taste the amuse-bouche barbajuans, the best in all Monaco), a concentration of talent and exceptional products, brought together by the teams of Dominique Lory, who, like the whole brigade, seems to be having a blast in this titanic (average 80 covers) and gratifying mission. The show is complete: the glittering Mediterranean on one side, the open kitchen with its large rotisserie and silver presses on the other, the roof opening under the azure sky, the Babelian hubbub blurred by the thick blue carpet in a universe of luxury of which this simple sign "Le Grill" is a symbolic marker. Hotel guests join the regulars for this magnificent tradition (remarkable pigeon on a trunk, crispy skin, melting flesh, nice thickness, reduced juice, crunchy peas, puffed apples as impeccable as Emmanuel Renaut's, lacquered and roasted rabbit, so moist with spring vegetables..) as well as genuine creations, such as gamberoni, jelly and a subtle granita of rock soup lightly spiced with espelette and chickpeas, in an original, fresh and punchy execution. Very gourmet desserts, from the classics to the soufflé variation or the rhubarb creation with mascarpone sorbet, a large cellar for all tastes, hyperbolic (when euphoria makes you let go a little) and well-deserved additions, remarkable and very well supervised service. And don't be surprised if your neighbors order a portion of fries on the side. That's what the Grill is all about!
