Remarkable Restaurant Over the years, Marcel Ravin has become one of the Principality's most influential and closely followed chefs. And with good reason! His cuisine is original, crossbred and surprising, taking calculated risks to offer a broad panorama of Riviera cuisine blended with spices and exoticism. Discover the calalou with cristophine borlottis, royal dachine and shellfish, or the more consensual marriage of poultry fondant and foie gras with zucchini fleur fricassee of sot l'y laisse and chanterelles, gamberoni tortellini with blaff des têtes and rouc or quasi de veau boucané ris de veau meunière tamarin and taggiasche olives. Marcel's world is vast, and he explores many of its shores to the delight of his guests, right down to the desserts: peach and carob, chocolate, sweet potato lemon milk punch.
