Remarkable Restaurant Fabien Beaufour's third toque? Well deserved this year, after a steady rise over the past two years. Technique, textures, taste, gourmandise, that's what we like, and this distinguished table is justly rewarded. The product takes center stage in this local universe, where everything is tightly controlled, from the memorable chawanmushi of organic roe, grilled fins and truffle juice, to the Japanese perfection of the dish. The charcoal cod, lacquered with mogettes and goat's cheese shells, shows inventiveness and the lamb mouse mastery, both in the quality of the cooking (melting, tasty flesh) and the mint and black garlic jus. The desserts remain consistent, well-constructed and balanced, and the cellar continues to improve. Service is well-paced, courteous without being overbearing.
