Remarkable Restaurant Having previously worked at Alan Geaam's Nicolas Flamel inn, where he held two chef's hats, Grégory Garimbay was brought in at short notice to replace Julien Dumas, who had moved on to other horizons. Even today, the menu is still modest, with only five courses (lunches are reserved for "members") and six courses including two desserts, it's difficult to have a complete assessment of the restaurant's real potential. Nevertheless, what is currently done is well done, with spider crab with lovage and caviar, sea bass with periwinkles and green beans, and beef with chicory and pepper. The three toques are to be confirmed with a slightly expanded menu.
