Chef's Restaurant Good work in the heart of the vineyard. And with good reason: the Koehler family has been running the inn for over two centuries, and everyone has learned from previous generations. The result is a Cheval Blanc that's still as dashing and sharp as it was in 1795! Today, Caroline and Jérôme welcome their guests with the utmost comfort and modernity, and in a beautiful setting, the menu respects the idea of a tradition that is not static, but on the contrary always evolving: carpaccio of pink trout with red onion passion vinaigrette, Alsatian poultry to share "like a rooster in dough", vacherin griottes sorbet griottes within a short, well-mastered menu. The four-step menu for €46 is a good option. A fine Alsatian cellar, respecting all styles (Deiss, Boesh, Züsslin, Frick, Beyer, Muré...).
