Chef's Restaurant Without being 100% plant-based, Cyril Garcia's cuisine offers a beautiful stroll around seasonal vegetables and fruit, served on their own, raw or cooked with just the right seasonings. This is not the only quality of this virtuous, modern establishment. The chef's commitment to fisheries and livestock farming is equally strong, and each plate goes straight to the heart of the matter, with beautiful sauces, well-executed oils and condiments with aroma, texture and length on the palate: turnips and peas with wild garlic, soy galette with white asparagus, Jerusalem artichoke with obione leaf, a good back of bass with a creamy leek, sake and satay sauce, brunoise of kohlrabi, red tuna with snow peas in pickle form, almonds and ginger, a cheeky and successful pre-dessert with strawberry and praline asparagus, before a classic strawberry-rhubarb. A pleasant sequence in this restful room on the Écusson pedestrian thoroughfare, a strong cellar for the whole region, led by a passionate sommelier.
