Chef's Restaurant Some people thought that Yannick Delpech had turned his back on the good old gastro codes - white tablecloths, candelabras on the tables and "be careful, the plate is very hot". But that's not exactly what our great chef from the Tarn region had in mind when he launched this new chapter in his already impressive career (four toques at the Amphitryon, bistros, regional cuisine, a patisserie, a charcuterie pâtissière, concepts and ideas galore...). Of course, there's a fixed, imposed seven-course menu at €129, just like the rookies, in a spectacular setting, a single large room with high ceilings, a lounge area, an open kitchen and an intimate dining room for fifteen max covers, with a contemporary wood decor and a personal arty touch (images projected onto the walls without sound). As for the rest, it's contemporary Delpech: everyone in denim overalls, a relaxing, cool atmosphere, perfect service orchestrated by Fanny, who acts as sommelier, and a cuisine that may be totally in control, but that doesn't make unnecessary chabadas: spring vegetables with Maltese sauce, tapioca croquette with sheep's tome, beef, marinated sardines, guanciale, lemon watercress for a perfectly mastered terrestre mer that reminded us of a few Columérine dazzling dishes from the past (foie gras with anchovies, beef and oysters...). The parfait glacé bergamot, coriandre, sorbet épinards, meringue bergamot, citron makes a perfect conclusion, the cellar is building, still lacking a few small ones at attractive prices.
