Chef's Restaurant It's a party in the heart of Toulouse, a place openly dedicated to sharing and agape. The tables are deliberately lined up to encourage encounters, and a contagious hubbub emanates from the premises, remobilizing the idea that cooking goes hand in hand with conviviality and exchange. The plates are no exception to the rule: small dishes in which everyone is invited to pick up a fork, ideas that elevate the bistro genre in a contemporary, Mediterranean vein, from brocoletti à la braise, cervelle de canut, smoked herring roe, fried shallots; mussels marinière, lemon chicken sauce, Espelette chili oil; sweetbreads, cauliflower tempura, lemon and herb vinegar and strong jus; or a very fine arroz bomba, cuttlefish marca, prawns and aïoli. A very (very) lively atmosphere.
