Gault&Millau's review 2026

Vincent and Paul Du Bois took over the former Perchepinte restaurant at the beginning of the year, and got off to a good start with a bistronomic approach to traditional dishes. Having worked with Ducasse, Saintagne and Grébaut, Paul has experience and good ideas, and demonstrates an engaging mastery. His ideas are promising, with a repertoire inspired by the Basque country, such as ribs de cochon ibaïama laqué, oreilles, citronnelle and pommes allumettes, a poached saint-pierre, roasted fennel, asparagus, citron and pil pil sauce, artichoke, onion and ossau iraty pie, Lagast mountain pork chop, roasted pointed cabbage, pimento and sweet spice jus, lemon meringue, kumquat and hibiscus tartlet. Small contemporary cellar, with organic and natural wines: Arretxea, Hervé Villemade, La sœur cadette, Fanny Sabre, Mylène Bru, Pauline Lair, Yann Chave..
