After several years spent exploring bistro cuisine and multiplying Parisian projects, Thibault Sombardier is now making his return to the world of haute gastronomie. The chef enthusiastically announced this new chapter on his social networks:"I'm delighted to announce a new adventure at Pavillon de la Reine. starting today, I'm taking over the reins of Restaurant Anne, writing a new page in its history and signing my return to gastronomy", enthused Thibault Sombardier.
Recognized expertise
A native of Lyon, Thibault Sombardier forged his career in the most prestigious kitchens, including Le Meurice in Paris and Le Carré des Feuillants. at the head of the gastronomic restaurant Antoine, he built up a fine reputation in haute cuisine, before turning to several more accessible Parisian addresses, such as Mensae, Sellae (1 toque) and Mojju (1 toque).
Today, he returns to haute cuisine with Anne (3 toques), succeeding Mathieu Pacaud, where he aims to offer a refined and generous culinary experience. "Accompanied by Matthieu Pirola, our gourmet cuisine will sublimate the unique spirit of this House in the heart of Place des Vosges", assures the chef.
