Where can you find a good brioche sausage in Lyon?

A must-try Lyon specialty, the saucisson brioché combines generous portions of charcuterie with a golden-brown brioche. From charcuterie shops to bouchons, here are the spots that keep this classic alive.

Marion Sauveur

A staple of Lyon’s culinary tradition, the saucisson brioché is much more than just a type of charcuterie: it epitomizes the quintessential Sunday meal in Lyon.

Its origins can be traced back to the meat pies of the Middle Ages. The perfect marriage of this slightly sweet dough and the Lyon-style cooked sausage—which was highly renowned at the time—is said to have taken place in the 18th century. Who invented it? Legends clash: chefs seeking refinement who replaced ordinary dough with delicate brioche, or resourceful “sausage makers” who wrapped their sausages to protect them from the winter cold. One thing is certain: it was in the 20th century that the dish firmly established itself in Lyon’s culinary landscape.

Whether plain or pistachio-flavored, this sausage, encased in a beautiful golden crust, continues to delight, whether served with a wine-based sauce or on its own. Here is our selection of spots that do it justice.

The most textured: Sibilia

At Sibilia, an institution where the spirit of the legendary Colette Sibilia still lingers, the brioche-wrapped sausage takes after its creator. It all starts with the house’s signature product: the famous cooked sausage. The meat is deliberately coarsely ground to offer a distinct and very pleasant texture. It contrasts with the softness of the golden-brown brioche. Its secret? A touch of cream slipped into the dough. Enjoy it plain or with pistachios to add that delicate, crunchy nutty note. A masterful interplay of contrasts, where the sausage’s bold character yields to the brioche’s sweetness.

  • Price: individual pistachio-flavored: €6; plain 500 g: €14.50, pistachio-flavored: €16.50; plain 1 kg: €28, pistachio-flavored: €30
  • Where? Les Halles Paul Bocuse, 102 Cours Lafayette, 69003 Lyon

The most family-friendly: Maison Cellerier

At Cellerier, a historic establishment in Les Halles, the brioche-style sausage is a family tradition. Developed two generations ago, the recipe is still enjoyed by the whole family today—from the 87-year-old grandfather to the 28-year-old son. Their guiding principle? To offer a product that brings people together, completely free of any sourness. To achieve this, the fresh meat is coarsely ground, sprinkled with pistachios, stuffed into casings, and cooked very quickly. It is then wrapped in a well-buttered brioche. A slice of Lyon tradition that brings all generations together.

The Most Refined: Crauser Bello by Jérémie Crauser

At Crauser Bello, it’s all about pure tradition: the brioche sausage comes in plain or pistachio varieties. The first is filled with authentic cooked sausage (pork casing, a splash of white wine), while the second features cervelas (beef casing, pistachios, Madeira, and Armagnac—because Jérémie Crauser doesn’t want to choose). Both are encased in an ultra-buttery brioche, perfected after extensive testing. On the palate, the full-flavored meat offers a hint of acidity that balances the richness of the brioche. A true testament to mastery: the brioche stays perfectly attached to the meat, thanks to a little trade secret. This expertise was recognized in 2022 with the People’s Choice Award at the Gault&Millau Tour. The little cooking tip? Reheat the slice of brioche-wrapped sausage in foaming butter, drizzling it generously like French toast. Devilishly good!

  • Price: €3.50 per slice; plain: €31.90/kg; pistachio: €36.50/kg

The Most Recognizable: Charcuterie Bonnard

A beloved institution for many Lyon families, Bonnard offers a brioche sausage that’s instantly recognizable. Its signature feature? An elegant lattice pattern of dough on top, which adds plenty of crunch. Inside: a generously buttered brioche that encases a cervelas sausage made with Label Rouge farm-raised pork from Auvergne, marinated in Madeira and pistachios, and stuffed into a beef casing—a sausage that’s full of character. Enjoy it hot or cold, without sauce, so as not to mask its flavors. A true treat in the purest tradition.

  • Price: about €35 each, serves 4 to 5 people
  • Where? 36 rue Paul Chenavard, 69001 Lyon

The Most Buttery: Gast

While Gast is famous for its sauerkraut, it champions with equal fervor the brioche sausage recipe inherited from the grandfather—a master butcher—who helped make the shop’s heyday in the last century. True to this historic spirit, the shop offers a cook-at-home sausage made with finely ground meat, wrapped in a well-buttered brioche that’s both melt-in-your-mouth and crispy. The shop’s recommendation for enjoying it to the fullest: savor it with a pat of fresh butter on top of the sausage, just as you would with a radish. Absolutely delicious.

  • Price: €3.90 per individual serving; €29.40 per kilo
  • Where? Les Halles Paul Bocuse, 102 Cours Lafayette, 69003 Lyon

The Most Down-to-Earth Spot: Le Café des Fédérations

At Café des Fédérations (1 toque), an authentic bouchon founded in 1872, the brioche-style sausage reigns supreme among appetizers. Selected plain from Cellerier, it’s gently steamed to preserve its tenderness without drying it out. It is then elevated by the restaurant’s true signature: its syrupy sauce. This blend of Côtes-du-Rhône wine, carrots, and mushrooms—bound together with a hint of blood sausage and chocolate—gives these generous slices their distinctive character. A precise recipe that has been carefully preserved in the restaurant’s historic recipe book for generations. Enjoy it in the dining room with its traditional decor or, better yet, seated in the superb vaulted cellar below. A quintessential Lyon experience…

  • Price: €12 à la carte for lunch; €36 for the set menu
  • Where? 8–10 rue Major Martin, 69001 Lyon

The Most Generous: La Meunière by Olivier Canal

At La Meunière (1 toque), an iconic bouchon on the Presqu’île led by Olivier Canal, generosity is the name of the game. The brioche-wrapped sausage is served as a single, thick slice on the plate. It’s cut from an impressive 50-centimeter-long piece. The sausage from Maison Bobosse is wrapped in brioche dough that has risen overnight. The result when sliced? The sausage sits perfectly in the center of an ultra-generous crust. Each slice is then grilled on a plancha, resulting in a crispy exterior and a center that remains soft, and topped with a rich, indulgent port sauce. An XL-sized brioche-wrapped sausage, where every bite delivers on its promise.

  • Price: €17

The Most Comforting: Chez Hugon by Fatima Zerrouki

At Chez Hugon (1 toque), a Lyon institution, the brioche sausage is a treat you have to earn: it’s only offered as a special and in the dead of winter. Made with pistachio-flavored sausage from Maison Duculty—a butcher in the Pilat Regional Nature Park—and a house-made brioche dough rich in butter, it strikes a perfect balance: two-thirds brioche to one-third sausage. This ensures that every bite offers the perfect balance between softness and texture. The little extra touch? It’s baked in the restaurant’s old oven. The slice, cut nice and thick, is then grilled to give it a toasty edge before being topped with a veal jus in red wine, sweetened with red currant jelly. A pure delight.

  • Price: included in the set menu for €30 (appetizer and main course) or €34 (appetizer, main course, and dessert)

The Classic Choice: Les Lyonnais by Julien Bobillon

In the heart of Vieux Lyon, the bouchon Les Lyonnais (1 toque) fully embraces tradition with its brioche-wrapped sausage. The brioche dough, entirely homemade and ultra-rich, envelops a sausage carefully sourced from Fanton. At the table, it’s served as an appetizer: two slices, topped with a well-balanced red wine and shallot sauce where the wine retains all its character. Tradition is carefully upheld… and that’s the true art of this spot.

  • Price: €16.30; as a starter in the three-course menu for €39.50
  • Where? 19 rue de la Bombarde, 69005 Lyon

Best paired with: Les Garçons Bouchers

At Les Garçons Bouchers, a Lyon-style “steakhouse” with the Maître Restaurateur designation, Maison Bobosse’s brioche-wrapped sausage takes center stage. Here, it’s the accompaniments that make all the difference. The dish is elevated by its wine-based sauce with shallots, painstakingly crafted from a slow reduction of meat trimmings. On the palate, the bold red wine flavor works wonders.

Les Garçons Bouchers

The brioche sausage is served as a main course in a generous portion of four slices, accompanied by a macaroni gratin generously loaded with cream and seasoned with a pinch of nutmeg, or a gratin dauphinois prepared to perfection. A delicious stop in the heart of Lyon.

  • Price: €12 as an appetizer, €22 as a main course
  • Where? Les Halles Paul Bocuse, 102 Cours Lafayette, 69003 Lyon
