One of the stars of Lyon's butchery scene, it's as authentic as it gets, and as popular as ever with tourists in search of the real thing. And the house never fails to deliver, with salade lyonnaise and hot sausage, poultry liver cake and apron sapper, and a few dishes of bourgeois nobility, like sweetbreads with cream and morels. You can wash it all down with chiroubles or fleurie, finishing with the house praline tart.
