Germaine: A Tasting Menu You Won’t Want to Miss

For the past two years, Maxime Chentouf, winner of the 2024 Gault&Millau Young Talent Award, has played a major role in revitalizing Bayonne’s culinary scene. All year round, his bistro-style counter restaurant serves up straightforward, hearty cuisine inspired by the market, featuring a single menu priced at €64. During Bayonne’s holiday season, this menu gives way to a takeout street food offering, running—just like last year—from July 15 to 19: pulled pork and chimichurri rolls, veggie rolls with pickled onions, fresh herbs, and romesco sauce, as well as a Saint Sardos hazelnut praline French toast. Patxamama, the everyday eatery getting into the festival spirit

Just a stone’s throw from the Marengo Bridge, this arty and welcoming eatery continues to do what it does best during the five-day holiday: a simple, hearty lunch for €25 all-inclusive—coriander-mint chakchouka, roasted chicken with mashed potatoes and Kampot pepper emulsion, and chocolate mousse with olive oil and chili. In the evening, the menu gets more ambitious, featuring beef bourguignon and pork belly with cocoa sauce.

La Table Sébastien Gravé, the institution on the riverfront

Since returning to the Basque Country, Sébastien Gravé has been running a must-visit restaurant in Bayonne. During the holidays, the chef offers a festive menu [price to be confirmed], as well as “Sebby’s Tapas Bar,” where live music and tapas go hand in hand every day from 11:30 a.m. to 11 p.m.
