On the slate, simplicity and regional tradition rule, on plates mastered over many years: Montauzer charcuterie, pig's trotter, fish soup, hake koskera, garlic cod, Basque chicken, tripe, piperade jambon chipolatas... The mass is said, with a few suggestions of the moment, like the gribiche calf's head.
