Chef's Restaurant It's impossible to talk about Bayonnais gastronomy without mentioning the Tellechea family, whose auberge has been an institution for over fifty years. It's not about revolutionizing cuisine, but it does have the technique and heritage to legitimize its two toques and its renown. Jean-Claude Tellechea conveys a sincere passion, and we come back for these fine demonstrations, the perfect egg, mushroom fricassee, grey shallots, summer truffle, truffle oil and marsala broth, the snacked tuna, chestnuts, cashew nuts, ewe's milk shavings and parsnip velouté, the stuffed poultry ballotine, quinoa and granny smith duxelles, reduced trunk juice, a hot soufflé with grand marnier.
