Chef's Restaurant It's one of Bayonne's great institutions, a gastronomic inn run by the Tellechea family for over fifty years. The house expresses a kind of wisdom, promoting the Basque terroir through renewed dishes. Jean-Claude Tellechea proves his ability to innovate, with inspired dishes that don't hesitate to go beyond the frontiers, such as liégeois of warm green oysters, marine chantilly and shiso, roasted scallops, quinoa, chorizo, Banka trout egg, hazelnut-sesame milk, a quasi of veal lacquered with Loreztia honey, pine nuts, steamed green cabbage, bacon, porcini mushrooms and Bastidarra yogurt cream with veal juice, an M. Txokola, hazelnut crumble, shavings and chocolate-hazelnut ice cream. Formulas from €29 to €74.
