Chefs and artisans have no shortage of creativity when it comes to creating their signature galettes, with their elegant shapes and gourmet flavors. Behind each one is a story, an emotion, a signature to be savored... and shared!

The Joyau des Rois galette, The Peninsula Paris

The Peninsula Paris pastry chef Anne Coruble, winner of the Pâtissière de l'Année 2026 trophy, has created a resolutely modern galette with surprising twists. inside, a frangipane between toasted almond and fresh almond, enhanced by notes of orange blossom, and a singular fava bean, "designed as an invitation to travel".

Feuille d'Amande galette, Park Hyatt Paris-Vendôme

Narae Kim, Pâtissière de l'Année 2024, imagines Epiphany with elegance. Her galette takes the shape of an almond leaf, with precious details. Beneath the puff pastry is an almond frangipane, a marzipan flavored with amaretto, embellished with crystallized amaretto flakes. This galette promises a unique, sweet moment.

The Shangri-La Paris galette des rois

For his first galette at the Shangri-La Paris, Timothy Lam has created a crescent-shaped puff pastry with hazelnut frangipane and creamy hazelnut gianduja. This play of textures is sublimated by a delicate flake-like decoration.

Fleur de Noisette galette, La Réserve Paris

Jordan Talbot has created a poetic galette for Epiphany. In homage to Brittany, the galette is adorned with a flower, like a fine lace crepe. Beneath the fresh butter puff pastry is a hazelnut frangipane cream with Valencian almond and toasted vanilla, and a heart of Piedmont hazelnut, all gourmet and generous. It houses a ceramic bean, haloed by the 10ᵉ anniversary seal of La Réserve Paris.

Kouign-amann-style galette at the Waldorf Astoria Versailles - Trianon Palace

At the Waldorf Astoria Versailles - Trianon Palace, pastry chef Eddie Benghanem also puts Brittany in the spotlight, with a galette "caramelized like a kouign-amann", the famous butter cake. inside the galette, a traditional frangipane cream.

The Four Seasons Hotel George V's galette des rois

For a moment of sharing that appeals to young and old alike, Four Seasons Hotel George V head baker Guillaume Cabrol has created a fleur de cazette, combining caramelized croissant dough with a lightly cocoa-flavored puff pastry. At its heart, the frangipane blends almond and cazette flower, enhanced with vanilla and a dash of rum. As for the bean, a porcelain hazelnut has been slipped into each galette.

Ladurée Signature galette

In homage to the craftsmanship of the Ladurée house, this galette reveals an inverted puff pastry on a shortbread cookie, topped with a frangipane cream with almonds from Provence and a pure almond cream. The whole is covered by mini-shells of vanilla macaroon and golden crushed almonds. A gold macaron-shaped bean hides inside.

The Hôtel Plaza Athénée's galette des rois

For Epiphany 2026, theHôtel Plaza Athénée celebrates tradition with the "Coeur d'Amande" galette des rois, signed by pastry chefs Angelo Musa and Elisabeth Hot. This creation combines a golden puff pastry with toasty notes and a heart of two almond creams: airy and fragrant with roasted almonds, and soft frangipane. The almonds, sourced from a Provencal cooperative, guarantee quality and expertise. elegant and light, this galette reinvents tradition with refinement.
