Naraé KIM
Pastry Chef : 1 restaurant Naraé Kim had two wishes: to become a pastry chef and to work in France. A dream now fulfilled, the Korean pastry chef continues to work with chef Jean-François Rouquette at the Park Hyatt Paris-Vendôme.The year she turned 15, Naraé Kim was given a great gift: she was accepted into the pastry academy that had just opened in her hometown, Dangjin. She went on to study nutrition and won her first competitions, including the Pastry Woman Skills Competition.
In 2011, she was one of three selected to benefit from the partnership between her school and the Hyatt Group. Heading for the Pacific island of Guam. Last year, she joined the Grand Hyatt Seoul. "It was very difficult because Korean culture is very strict and direct. Plus, we were only two women in a team of 40 pastry chefs."
She later joined the Park Hyatt in Ho Chi Minh City, Vietnam, where she became head pastry chef after six months. She also twice won the gold medal at the World Global Pastry Chef Challenge. Then, during the hotel's 10th anniversary celebrations, she met chef Jean-François Rouquette. The Korean then saw the possibility of fulfilling one of her dreams: to work in France.
This came true in 2018, when she took up the position of pastry chef at Cheval Blanc in Courchevel. Once the winter season was over, she moved to Paris to become sous-chef pâtissière under Aurélien Rivoire at Pavillon Ledoyen, Yannick Alléno's restaurant. "Thefirst time I tasted Monsieur Alléno's cuisine, I fell in love with the textures and flavors."
Then, in 2021, Jean-François Rouquette invited her to join him at his gourmet restaurant Pur' - Jean-François Rouquette. An opportunity she readily accepted.
